RIKRI BREWING, based in Takaban, Meguro, Tokyo, has introduced a new Double IPA called “Wanderlust.” The beer is listed at 8.0% ABV. In the post, the brewer explains that the batch was inspired by the experience gained from “Wallflower,” where the team learned that aroma and flavor balance could be maintained even at a lower final gravity. For this release, they tried to lower the gravity with glucoamylase while keeping an all-malt recipe, but the enzyme dosage and reaction time did not reach the expected result, leaving the beer at a standard DIPA gravity.
