KAMIKATZ Beer Releases a New Saison, “YUKOH SAISON,” Made with Fully Ripened Yuko
KAMIKATZ Beer is introducing a saison called “TOWN CRAFT - Beer for Thinking About the Future of the Town - / YUKOH SAISON,” made with fully ripened yuko from Kamikatsu Town. It is a seasonal beer with a dry finish layered with the sweetness and citrus character of yuko.
From KAMIKATZ Beer, which continues brewing against the backdrop of Kamikatsu Town’s zero-waste culture, a saison made with fully ripened yuko has arrived. “TOWN CRAFT - Beer for Thinking About the Future of the Town - / YUKOH SAISON” is an aromatic beer that generously uses fully ripened yuko from Kamikatsu Town, Tokushima Prefecture.
The base saison is defined by a crisp, dry finish, plus banana-like fruitiness from yeast-derived esters and a spicy aroma reminiscent of clove. On top of that, the mellow sweetness of fully ripened yuko and its firm citrus flavor come together to create a refreshing beer with real depth.
The specs are straightforward. ABV is 5.0%, and IBU is 18. The malt bill consists of Lager Malt, reRise Malt, and Wheat Malt; the hops are Cascade and Motueka; and the yeast is LalBrew Belgium Abbaye. The adjuncts used are granulated sugar, yuko juice, and yuko peel.
