Tokyo Morishita's sabo beer bar & bookstore has started brewing its anniversary beer to coincide with its 1st Anniversary. The brewery chosen this time is its long-familiar partner, GORA BREWERY. The post reveals the outline of a special beer commemorating the anniversary, along with scenes of the brew taking shape at the Hakone-Yumoto brewery.

The beer is named Potlach (ポトラッチ). Its style is Imperial Gose, and pear is used as a secondary ingredient. The hop bill combines Nelson Sauvin, El Dorado, and Galaxy, creating aromas reminiscent of ripe pear and white peach syrup, layered with white grape character and tropical nuances. Alcohol content is 7.0%. Rather than leaning only into sourness, it is designed to balance fruitiness with satisfying drinkability.

The post also mentions that, while looking back on the Red Porter Sour brewed for the opening celebration, this time they intentionally steered toward a sour direction that feels like "sabo." Instead of the strong hop punch of a Hazy IPA, the emphasis on acidity and fruitiness that pairs well with food seems like a choice that suits this place.

sabo beer bar & bookstore is a Morishita beer pub where beer and books can flow together naturally. In addition to enjoying guest beers, one of its attractions is these limited brews born from its ties with breweries like this one. It will be worth watching for follow-up news on when anniversary beer Potlach will be served.
