Tsuji Brewing, a brewpub located in Chigasaki, Kanagawa, is now pouring its annual seasonal beer, Fresh Hop IPA.

The beer was brewed with fresh hops carefully grown by Home Ground Hop, a longtime partner of Tsuji Brewing. The brewing team and collaborators helped harvest Cascade and Nugget hops, then prepared them by hand before brewing.

This year’s hop yield was slightly limited, so the fresh hops were used primarily during the flameout and whirlpool stages. As a result, the beer is described as showing relatively restrained bitterness, with a pronounced grassy character and flavors that evoke fresh greenery.

Tsuji Brewing also recommends comparing Fresh Hop IPA with Mikoop IPA, an IPA brewed without fresh hops. Tasting the two side by side offers a way to explore how fresh-hop additions influence aroma and flavor.

The previous Session IPA had sold out, making way for this new seasonal release. At Tsuji Brewing’s taproom, guests can enjoy house-brewed beer in a relaxed Shonan setting while following the brewery’s own hop-growing efforts.
