Collaboration highlights

On June 18, DD4D Brewing announced a new collaboration beer, Key to the Next Door Salty Lemon. The partner is Seiryu Shuzo in Saijo, Ehime. For a brewery based in Matsuyama, the release is a local partnership that brings together beer and sake-making traditions from the same prefecture.

Brewing details

The beer is brewed with the sake yeast used in Seiryu Shuzo's flagship Iyo Kagiyaya junmai ginjo labels, Kuro Label and Shikkoku Label. It is classified as a Fruited Sake Ale and listed as happoshu. The beer is 6.0% ABV with 15 IBUs. Ingredients include malt, sugars, lemon peel, salt, hops, and carbon dioxide. Cascade is the hop, and Pilsen is the malt listed.

Flavor profile

According to DD4D, the beer opens with an elegant ginjo aroma similar to white grapes, then finishes crisp with a grainy malt note. Ehime-grown lemon and a touch of salt add a brighter, Setouchi-style accent.
