A new collaboration from DD4D

DD4D Brewing, based in Matsuyama, Ehime, has introduced a new collaboration beer called Time After Thyme. The partner for this release is Scott Murphy, a musician originally from Chicago who lives in Japan. Murphy is known for his work as bassist and vocalist in ALLiSTER and MONOEYES, and he also published a book on craft beer appreciation, Enjoy! Craft Beer.

Citrus, herbs, and hop character

The beer is a Citrus and Spice IPA built around the aroma of kawachi bankan and lemon, with the cooling character of thyme layered on top. DD4D also used a generous amount of citrus-forward hops, including Zumo, Columbus, and Centennial, to bring out lime- and grapefruit-like notes.

The finish is described as crisp, with a subtle sweetness from malt and agave showing through. The result is a beer designed to be aromatic but easy to keep drinking.
