A single-hop showcase for Dolcita

Bighand Bros. Beer’s new Morganite is a Dolcita Single Hop West Coast Pilsner. It has an ABV of 5.5% and 30 IBU.

The beer opens with a gently sweet fruit aroma reminiscent of peach gummies and muscat grapes. Although the nose is expressive and aromatic, the palate is dry, crisp, and easy-drinking, with a clean structure that keeps the malt from feeling heavy.

As the beer develops, sage-like herbal character and a subtle woodiness emerge. These more grounded notes add depth beyond the initial fruit impression. A clean bitterness lingers on the finish, giving the beer a refreshing sense of definition and inviting another sip.

An ore-named brewery in Kyoto

Bighand Bros. Beer operates an underground brewery in Kyoto’s Nishijin district. The brewery presents its beers as gem-like discoveries unearthed by a pair of beer-loving mole brothers, and names each beer after a mineral or gemstone. Morganite follows that established concept.

The brewery takes classic British styles as a foundation while also exploring modern American beers and lager styles. Its beers are made in small tanks, in limited quantities and with careful attention to detail. For Morganite, the crisp drinkability of a pilsner provides the base, while Dolcita’s aromatic character takes center stage.

With bright fruit aromatics, a dry finish, and layers of herbal and woody nuance, Morganite should appeal to drinkers looking for a fragrant yet highly refreshing pilsner that can be enjoyed on its own or alongside food.
