Sakazuki Brewing opens FUKAYOMI on Pairing Day, May 20
On May 20, Sakazuki Brewing tapped its draft 《FUKAYOMI》 and held a food pairing day featuring a rich tiramisu with salt caramel and walnuts. The day’s tap list ran to 17 beers, with a wide lineup ranging from light lagers to dark styles.

On May 20, Sakazuki Brewing (Adachi Ward, Tokyo) announced the day’s tap list and food pairing contents under the banner, “Today is Pairing Day!” The lineup included 《shy girl》 Bohemian pilsner, 《shy daddy》 American lager, 《Bye Bye OVATIFOLIA》 agave American pale ale, 《Hatsukaze》 sake-yeast beer, 《after the rain》 fruit beer (Tosa buntan IPA), 《hangover!》 imperial IPA, 《Time Thief》 English brown ale, 《Red shoes》 coffee beer (coffee amber), 《Twilight》 American IPA, 《KISS ME》 peanut chocolate milk stout, 《Yoru no Mori》 chocolate banana stout, and 《Akane Sasu》 a wood-spice fruit sour ale made with red grapes, among 17 beers with distinct personalities.
The highlight of the day was the opening of 《FUKAYOMI》. This beer was jointly developed to commemorate the renovation of Sanseido Bookstore’s Jimbocho Main Store, and the notice explains that when poured from the tap, it comes across a little differently than the can version, with a smoke impression coming forward more than a peaty one. Its mouthfeel is relatively sweet and full, and the finish from the oak chips lingers without becoming too heavy.
The pairing offered was “A rich tiramisu with salt caramel and walnuts.” Matching 《FUKAYOMI》, which carries elements reminiscent of caramel, roasted malt, coffee, and cocoa, the dessert is built around cream and mascarpone blended with a salt caramel sauce. The beer’s sweet roasty character, the dessert’s richness, saltiness, and slight bitterness overlap, creating a combination designed to let you enjoy the lingering finish as an after-meal plate.
