Craft Beer & Wine THE DODO HOUSE, a beer pub in Meguro, Tokyo, tapped Good Hops’ Tasogare no Cascade on September 30. The pub is open from 5 p.m. to midnight, making the beer the final new tap announced for September.
Tasogare no Cascade is an IPA built around domestically grown Cascade hops. According to the pub, it combines gentle citrus and herbal aromas with a substantial malt character, sweetness, and a composed bitterness. The recipe uses domestic Cascade and Saaz hops along with the brewery’s own Hallertau, adding a subtle German influence while keeping the character of Japanese hops and malt in focus.
The tap list also includes Kankiku Brewery and The Dodo House collaborations Hakuchu Dodo and Ifu Dodo; Minoh Beer’s Papa Zaru Lager; Iwate Kura Beer’s Japanese Herb Ale Sansho; Sierra Nevada Brewing’s Hazy Little Thing IPA; and Kamado Brewery and Daisen G Beer’s Weizen Master. The selection covers a broad range of styles, from lager and herb ale to hazy IPA and weissbier.
