Hongo Kikuzaka Town Camos, a brewery and taproom in Bunkyo, Tokyo, shared a post about a local rosemary project linked to Toyo Gakuen University. According to the post, a customer took home rosemary harvested from the university rooftop and later sent back a photo of focaccia baked with it.

From neighborhood herbs to the table


The brewery described the scene as a small cycle that makes everyday life a little richer. The focaccia photo shows the herb used simply and visibly, with rosemary placed on top of the bread before baking.

Camos also said a special craft beer using the Toyo Gakuen University rosemary will be introduced at an event this weekend. The shop added that more rosemary is still available for customers who would like some, and asked them to speak with staff.

As a brewery rooted in Hongo, the project fits Camos' neighborhood-focused approach. Using a locally grown herb in both food and beer gives the release a clear connection to place, while keeping the announcement grounded in everyday ingredients rather than a one-off gimmick.
