GRANDPA FISH & CHIPS, a beer pub in Kameido, Tokyo, has announced a new tap: “Kodo wo Yuku Hofu,” also known as “Pilgrims Respite - Hofu,” from Kyoto Brewing.

This pour is a barrel-limited edition aged for two years. The pub notes that pouring may take considerable time, reflecting the condition of the aged beer, and that it is available by the pint only.

“Pilgrims Respite - Hofu” is a strong saison brewed with rice and elderflower. Kyoto Brewing describes it as pale, dry and crisp, with a sweet floral and herbal character from elderflower. Orange peel adds a lively citrus accent, while Belgian yeast contributes additional aroma and complexity. The beer has an ABV of 8.0%.

GRANDPA FISH & CHIPS is known for pairing craft beer with fish and chips. The shop’s announcement lists hours from 5 p.m. to 11 p.m., with the fried-food last order at 9 p.m. The aged saison should make an interesting match for the restaurant’s crisp fried dishes, balancing their richness with its dry finish and aromatic herbal notes.
