Ube, Yamaguchi Prefecture-based Doctor Kong Brewing has announced "TWO" as a new release to mark its second anniversary. In an Instagram post, the brewery says it is a sour ale with a gentle tartness, brewed using a special koji that produces citric acid, in an approach that also connects to sake brewing. It is a beer designed with a light, easygoing drinking impression that fits the feel of spring.
Sales will begin with an unveiling at the brewery's kura-biraki event, and it will be sold as a limited three-bottle set with THE ANSWER and YETI MAGIC. THE ANSWER is the brewery's flagship beer, with a well-balanced harmony of orange, sweet fruity aroma, and spice. YETI MAGIC is presented as an easy-to-drink beer based on a witbier, incorporating rice koji.
On its official website, the brewery says it aims to make craft beer that it can produce with pride in the local community, and that local people can be proud of as well. This three-bottle set from the Ube brewery brings together the distinct character of brewery-specific ingredients such as koji and sake lees, the core identity of the flagship, and the tart expression of the new release, letting drinkers experience what makes Doctor Kong Brewing distinctive all at once.
