At the beer pub "Craft Beer 2 TAPS" in Shiomicho, Yokosuka, Kanagawa, Minoh Beer's limited brew "Saru-yama Shikao" has been put on tap.
This glass is a happoshu brewed through a collaboration between Minoh Beer and Aki-Shika Sake Brewery. Its defining feature is the use of rice koji, which layers a soft rice flavor and a brightness reminiscent of ginjo aroma on top of the complexity derived from saison yeast. The finish is quite dry, with a crisp, sharp drinking profile.
According to Minoh Beer's announcement, the subtitle is "Japanese Rice Brut." It has an alcohol content of 7.0% and an IBU of 15, so it is designed not to push bitterness strongly, but to be enjoyed for the balance between aroma and mouthfeel. Because the aroma changes depending on the serving temperature, it is easy to appreciate the differences as the beer gradually warms.
Craft Beer 2 TAPS is a beer pub on the second floor, and it is the kind of place that is well suited to calmly enjoying guest beers served on tap. This "Saru-yama Shikao" has a clean drinking profile and gentle bitterness, making it easy to pair with food. It does not get in the way alongside appetizers, seafood, or lighter meat dishes, and the aroma reveals greater depth the more glasses you have. As an opportunity to enjoy a limited brew from the keg, it is a glass that deserves attention not only from Minoh Beer fans, but also from anyone interested in saison-style beers or beers made with rice koji.
