Beer O'clock taps Swan Lake's Rouge Cerise, a 29th-anniversary sour
Beer O'clock in Chiba's Fujimi district has added Swan Lake's Rouge Cerise to its New Tap lineup. The 6.5% fruited barrel-aged sour is a collaboration with CRAFT ROCK BREWING and blends several differently matured base beers.

Beer O'clock is now pouring Swan Lake's "Rouge Cerise" (Fruited Barrel Aged Sour / 6.5%). The beer was released as a 29th-anniversary collaboration with CRAFT ROCK BREWING.
It starts from a Flanders Red Ale base and blends beers matured in several ways: oak barrels used for Swan Lake Beer’s Niigata Japanesque, a version fermented and aged with American cherries in oak barrels, another aged in red wine barrels from CAVE D’OCCI, and a beer matured in stainless kegs. The result is a layered sour with both fruit character and barrel depth.
Flavor direction
According to the post, the aroma opens with gentle oak, followed by a rounded malt profile and soft acidity, with cherry complexity lingering on the finish. It sounds like a sour built for slow sipping rather than a quick round.
Food pairing
The same post also introduced the monthly over-rice dish, "Oyster and Okra Gumbo-Style Over Rice." Inspired by Louisiana gumbo, it brings together oyster richness, okra, and Cajun spice elements, which fits the beer-focused, food-friendly style of Beer O'clock well.
Beer O'clock is a beer pub in Fujimi, Chuo Ward, Chiba City, where guests can follow tap changes and enjoy beer with a proper meal. A barrel-aged sour like this looks like a natural fit for that kind of setting.
