Originally released to mark the brewery’s anniversary last year, the beer returns as an Anniversary Edition. Its ingredients include wheat, sugars, hops, and honey. The brewery says the base beer was made with unheated honey from Shinshu and allowed to mature slowly in the quiet surroundings of Yudanaka.
The beer is described as having a rich profile reminiscent of dried grapes and raisins, along with a deep aroma evoking smoked figs. At 10.0% ABV, it offers substantial body, pronounced malt depth, and a lingering finish. Its amber color complements the beer’s slow-sipping character.
The name “TOU” refers to a small light first lit in the darkness. It represents a light that reflects the brewery’s journey so far while continuing into the future, making the beer a fitting release for an anniversary milestone.
