Based in Osaka's Nishinari Ward and brewing since spring 2018, Derailleur Brew Works is introducing a new product, "Nibansenji." As with the brewery's past beers, which have spanned a wide range through its distinctive worldview and design starting with Nishinari Riot Ale, this release is also characterized by a focus on the brewing process itself.

The star this time is a Maibock made using only first-press wort. In beer production, the wort that becomes beer includes a rich first-press wort and a thinner second-press wort, but this product deliberately uses only the former. The aim is clear: to push toward a fuller, richer flavor that lets the character of the malt come through more distinctly.

According to the description, the hops were chosen from understated German varieties, bringing the contours of the malt to the front. Release begins today at 11:00 a.m. Sales are being announced via the EC site, along with a message encouraging people to take their time and enjoy it under the spring sunshine. Despite the playful name, the beer's structure is straightforward and uncompromising. It is a beer that clearly reflects the brewery's thinking about how to draw out the umami of malt.
