Founded in 2023, GROUNDTAP BREWERY is based in a city known for its abundant spring water, locally called “uchinuki.” The brewery uses Saijo’s water for brewing and also works with local agricultural products as adjunct ingredients, bringing the character of the region into its beers.

The brewery is operated by Daitec, a company specializing in metal processing. Its knowledge of tanks, piping, and manufacturing contributes to the brewery’s approach to brewing equipment. Brewer Daiki Yamane reportedly became interested in brewing after being deeply impressed by Guinness in Ireland, adding another layer to the brewery’s story.
