A seasonal ginger recipe

Otako Beer Brewery announced the release of its early-summer Ginger Bitter on June 5. Based in the Nishi-Chiba area of Chiba City and known for its standing-bar style craft beer setup, the brewery is using plenty of fresh young ginger in this seasonal batch.

According to the brewery, the recipe shifts with the calendar. From autumn through spring, it leans on root ginger for a fuller, more grounded character. From early summer into summer, it switches to fresh ginger, bringing a lighter aroma and a juicier, easier-drinking profile. The idea is to keep the bitter backbone while making the beer feel more aligned with the season.

The brewery listed its hours for June 5 as 5:00 p.m. to 10:00 p.m., and noted that it would be closed on June 6 and June 7 for a brewery study trip. The week’s tap list also included house beers such as Hop Session and Citrus Wheat, alongside guest beers from Soubukotan Brewing, AJB, FUJIYAMA HUNTERS BEER, NORTH ISLAND BEER, and Nobara Homestead Brewery.

It is a straightforward seasonal beer release, but one that uses ginger well to mark the shift toward summer.
