A seasonal sour from Minakami
OCTONE Brewing in Minakami, Gunma, has introduced its seasonal beer, Tanigawa Sunrise. The beer is listed as a Cherry Red Sour Ale with 5% ABV and 24 IBU. Draft service has begun, and a canned release is also planned.
The beer uses cherries called Beni Sayaka from Takumi no Sato Tanigawaen. This is the fourth time the brewery has used the same cherry variety, and this time it is also the first time the brewery has used Philly Sour yeast. That yeast can produce lactic acid while producing alcohol, making it a practical choice for building a sour profile.
OCTONE Brewing bases its work on Minakami’s water and local ingredients. Operating from a taproom in the hot-spring district, the brewery has regularly released beers that reflect the town’s landscape and seasonal produce, including beers made with homegrown hops and local yuzu.
Tanigawa Sunrise fits that approach. It is another beer shaped by local ingredients and the seasonal character of Minakami, with draft service now underway and more release details to come.
