What kind of brewery is Iori Beer Dojo?
In Yabu City, there's this incredibly small brewery called Iori Beer Dojo, and Aizawa Iori's story here is amazing. He worked as a civil servant for 17 years, then quit his job in his 40s and became a beer brewer.
What, he gave up a 17-year civil service career for beer? What sparked that?
He'd been nurturing a dream of making beer for more than 20 years. But the environment to make it happen never quite lined up, so he found Yabu City's "startup support" regional revitalization volunteer program and moved from Amagasaki in 2020.
Wow! He realized a dream he'd had for over 20 years... And diving into the mountains of Tajima from the city must have taken real resolve.
The prototype first brew was called "Iori Hatsuji German Indian Pale Ale," and the name "Hatsuji" really shows how fired up he was. Since then, he's been developing beers using Yabu specialties one after another, including ones made with Asakura sansho pepper, and others using locally grown ginger and melon.

Another distinctive point is that he keeps the alcohol content low at 3.3 to 3.5%, and it's apparently popular with women too. Since it's not heavy, it's easy to pair with meals.
Low-alcohol is great! The kind you can drink from daytime without feeling guilty.
What's more, he's started working with local farmers to cultivate hops, and in the future he wants to build a guesthouse where people can drink beer brewed with Yabu City hops. The brewery is inside "Veg-Full Yabu" along National Route 9, and you can also buy it at the nearby inn "Kojo."
A guesthouse where it's made from local ingredients and drunk locally sounds perfect! Totally worth going to Yabu.
