When restaurant demand suddenly dropped during COVID, the pizza dough at that shop was originally fermented with beer yeast. From there, it developed into beer brewing itself. It's a brewery born out of adversity.

And all the brand names come from Sado's culture and nature. "ONDEKO" is an IPA, "KINZAN" is a golden ale, "KAYANOMI" is a stout, and "OKESA" is a Belgian white. They brew all eight varieties in small batches using the Iwami method.

The ingredients are impressive too: they use Sado's deep ocean water as the brewing water, and add adjuncts such as Sado-grown Shinnosuke rice, kayanomi, and Echigohime. In particular, the deep ocean water and kayanomi are ingredients that can only be used here.
