About 90% of beer is water. The water in Katashina comes from snow and rain that fall on the surrounding mountains, then filter through the ground over a long period before surfacing. It was also selected as one of the "100 Famous Waters of the Heisei Era." They brew their beer with that water.

Exactly. It's operated by the limited liability company Brumen, so it's still a young brewery. The brand names are wonderfully poetic too: "In the Mists," "Citrus Complex," "Tempting Barrels," and "In the Blue, high sky."

It doesn't look like they currently offer brewery tours or tastings, but you can buy it from their online shop. Katashina Village also gets many visitors for Oze hiking and winter skiing, so it's the perfect souvenir.
