A fourth collaboration built around a brighter, hazier profile

Fukuoka Craft Brewing has released Ichiban Shiroi Neko, the latest entry in its collaboration series with the Fukuoka beer specialists BEERKICHI and Yuyaboys. It is the fourth beer in the 'Shiroi Neko' line, and the brewery says this version was rebuilt from the ground up to emphasize a clearer sense of 'whiteness' in both appearance and texture. The retail price is JPY 903 including tax.

The beer is designed as a hazy IPA with a base of wheat and oats, giving it a soft, fluffy malt character and a smoother mouthfeel. The malt bill was reconsidered from scratch, with an eye toward adding a creamier impression. Rather than focusing only on haze, the brewery also paid attention to how the grist would shape the drinking experience.

Hops are centered on Citra and Nectaron, added generously through whirlpool and double dry hopping. The goal was not just aroma, but also the right kind of haze and a fuller fruit expression. The result is described as a cleanly cloudy, hop-forward, fruity, juicy, and aromatic white hazy IPA. At 7% ABV, it is slightly lighter than the previous release and positioned as a more drinkable version of the series.

Brewed in Okagaki, shaped by local water

Fukuoka Craft Brewing is based in Okagaki, Fukuoka, and makes use of local underground hard water drawn from 50 meters below ground. That water profile is a core part of the brewery's identity. The company originally started in Fukuoka's Daimyo district in July 2017 and began brewing in Okagaki in October 2022.

Ichiban Shiroi Neko fits neatly into that story: a local brewery working with local beer culture, then pushing a familiar collaboration format a step further. For drinkers who have followed the 'Shiroi Neko' series, this release offers a useful marker for how the recipe and aroma profile have evolved over time.
