The beer is a collaboration between cafe&bar Oasa and permanent. It uses rawanbuki harvested by the owner after cutting it down, then combines it with yama-wasabi, bergamot, and sansho pepper in a saison described as a true food-pairing beer. Rawanbuki is a giant butterbur native to Ashoro and known as Japan's largest butterbur.
The profile is dry and spicy, in line with permanent's strength in saison brewing. The aromatic character of rawanbuki is joined by the sharp heat of yama-wasabi, the bright citrus-like aroma of bergamot, and the clean finish of sansho. It is available in two sizes: 750 ml large bottle and 395 ml small bottle. It's a clear fit for drinkers who want a saison built to sit alongside a meal.
