A collaboration named after a Daikanyama slope
Daikanyama craft beer bar Bibibi. is featuring Kanpai! Brewing in its brewery spotlight series. The featured beer is Daikanyama-zaka Ginger Honey Pils, created to celebrate Bibibi.’s first anniversary in September 2024.
Kanpai! Brewing is known for naming beers after slopes in Tokyo, making Daikanyama-zaka a natural inspiration for this collaboration. The beer was developed by Bibibi.’s owners together with brewer Arai of Kanpai! Brewing.
Ginger steeped in honey
The recipe combines lager yeast and pilsner malt with ginger and honey. Sliced ginger was steeped in honey for more than a week before being added to the tank during the later stage of fermentation. The beer then underwent refermentation to finish.
The result is designed to be refreshing rather than sweet. It offers a crisp, clean finish from the lager yeast and pilsner malt, alongside ginger character and floral honey aromas. Its softly hazy appearance adds another distinctive touch.
Bibibi. is an approachable standing bar in Daikanyama that serves Japanese craft beer together with the stories behind each brewery and beer. Located at Castle Mansion 102, 13-8 Daikanyamacho, Shibuya, the bar offers an inviting setting for discovering collaborations such as this neighborhood-inspired pils.
