Shimanto Brewing releases second bergamot beer, yoin.
Shimanto Brewing in Shimanto, Kochi, has released yoin., its second beer made with Kochi-grown bergamot. The golden ale combines bergamot with malt and hops that evoke black tea, and bottle sales started alongside tap service.
Shimanto Brewing, a small brewery run by a married couple in a former old sake shop in Shimanto, Kochi, has released its second beer made with Kochi-grown bergamot, called yoin. The new release continues the brewery's focus on using local ingredients in a thoughtful, aroma-driven way.
According to the post, the beer is built around bergamot and paired with malt and hops that bring to mind black tea. The brewery describes it as a beer with a citrus aroma up front, followed by a soft tea-like aftertaste. It is presented as a limited-batch golden ale made with bergamot.
The suggested food pairings are practical and clear: herb-roasted chicken, white fish carpaccio, fresh cheese, and herb salads. Light citrus desserts such as lemon tart or chiffon cake are also recommended, which makes the beer easy to imagine at the table rather than only as a standalone pour.
Tap service and bottle sales started at the same time, and the bottle label was illustrated by @zu_zu__. As a limited seasonal release built around Kochi-grown bergamot, yoin. is the kind of beer that rewards a closer look from fans of fruit- and tea-adjacent flavors.
