The core of the new release is "Asuka Ruby" and six months of aging

Gutwolf Beer announced the arrival of its new product "Asuka Fuzz Berry" 750ml on Instagram at 2026-02-23 14:04. According to the post, the ingredients include "Asuka Ruby" strawberries from Fujiwara Farm in Asuka Village. Continuing the brewery's work with strawberries from that farm since 2021, this time it took on a "Fusion of beer and cider."

For the brew, it used plenty of juice from last year's harvested Asuka Ruby strawberries and fermented it by combining brewing techniques from both beer and cider. It then matured slowly for six months. The tasting notes are described as "wild," and "rich yet with a dry finish." Rather than leaning only into a fruit-forward fullness, the recipe appears designed to deliver a crisp finish.

Brewery context

Gutwolf Beer is a craft beer brewery based in Higashiyoshino Village in the Oku-Yamato area of Nara Prefecture. On its official website, it states that it "delivers carefully crafted beer using mountain water and mountain blessings." This new release is also one that foregrounds the pairing of fruit grown in Nara with fermentation techniques, and it seems fair to say that the brewery's focus on regional character has been distilled directly into this liquid.

If you want to enjoy it at the table, try it at a temperature that lets the aroma open up while also bringing out the dry finish, and pair it with fruit-forward appetizers or light meat dishes to better grasp the intent behind the recipe.
