Two Saisons from Yamagata's GAIRO Brewing Arrive at Sabatora Shuhan
Two saisons from Yamagata's GAIRO Brewing have arrived at Sabatora Shuhan in Yokohama's Yoshida-machi. SOULSHINE, which puts hop character front and center, and Omission, made with kuromoji, are lined up, opening up the kind of bottle-shop enjoyment that feels like drinking kakuuchi-style.

An Instagram post from Sabatora Shuhan announced that two saisons had arrived from Yamagata's `GAIRO Brewing`. The lineup includes SOULSHINE, which layers hop-driven freshness with saison yeast spice, and Omission, a table saison made with Japanese star anise tree, or kuromoji, from Yamagata Prefecture. SOULSHINE is `Hoppy saison / ABV 5.5%`, and Omission is `table saison / ABV 3%`; both are designed to pair easily with food.
SOULSHINE is a single beer that does not lean only on tropical flair, but layers lemon-like aromas, a black-pepper-like sharpness, and the depth typical of saison yeast. Omission is built around aged, dried kuromoji, with a small amount of Yamagata-grown hop "Kaikogane" to add woody nuance and a light bitterness.
Sabatora Shuhan as a Place
Sabatora Shuhan is a beer pub and bottle shop on the second floor of a back alley in Yoshida-machi, Yokohama. It offers a kakuuchi-style experience where you can taste natural wine and craft beer on the spot, and also buy bottles you like to take home. It is a good fit for trying beers like saisons and farmhouse styles, where the impression changes with aroma shifts and temperature.
