Kazenori Merry, a craft beer pub in Roppongi, Tokyo, has updated its meat nukazuke offering to grilled US beef short ribs.

According to the pub’s post, its popular nukazuke fried chicken sold out, and the new dish now features US beef short ribs. The meat is seasoned through nukazuke fermentation before being grilled, bringing together savory beef, roasted aromas, and the gentle complexity of rice-bran pickling. The post notes that US beef appears less often because of rising prices, making this a timely dish for guests who enjoy a substantial beer pairing.

The recommended beer is Trademark Codebreaker from Trademark Brewing in Long Beach, California. A West Coast IPA at around 7% ABV, it is known for a dry profile, firm bitterness, and dank stone-fruit hop character from Simcoe and Mosaic hops. Those qualities should cut through the richness of the short ribs while complementing their grilled aroma.

The pub also lists Ushitora Brewery’s “苦そうで苦くない ちょっと苦いシュバルツ,” a Schwarz-style dark lager whose roasted malt character offers a more restrained alternative to the IPA. It can be paired with the beef’s savory, charred notes from a darker-beer perspective.

Kazenori Merry’s curry specials for the day were pork with green Sichuan pepper and mutton with hyakuran and water spinach. Located in a basement in Roppongi, the pub is a destination for exploring craft beer alongside fermented, spicy, and boldly flavored food.
