Announcement of the Limited Beer


MOKICHI TRATTORIA, the beer pub of Kumazawa Brewery in Chigasaki, Kanagawa, introduced "Sake Lees Hazy IPA ~Sake Yeast~" as a limited beer for Kura Fest 2026. It is a Hazy IPA brewed with 100 kg of sake lees from its own junmai daiginjo "Uka Tensei," using both sake yeast and beer yeast.

In the post, the beer's defining characteristics are said to include citrus and sweet hop aromas, along with a faint ginjo aroma felt deep in the nose. It also explains that the beer is designed with multiple layers: a tropical-fruit-like flavor, a smooth mouthfeel from the sake lees, malt sweetness, and a dry, crisp finish.

Recommended pairings from Yaji, a former kitchen staff member and brewing lead, were also presented.
