ORYZAE Brewing Announces Restock of Black Head IPA
ORYZAE Brewing in Wakayama announced on Instagram that its "Black Head IPA" is back in stock. The brewery said the beer’s distinctive design, built on black koji malt, has been made even crisper this time by adding brewing rice, presenting it as a beer well suited to the warmer season.
Wakayama craft brewery ORYZAE Brewing posted "[Black Head IPA Restock]" on Instagram to announce the return of one of its popular beers. In the post, the brewery described the beer as having "steady, enduring popularity." It also said that customers often end up choosing it after some deliberation at the shop, underscoring the strength of its status as a staple.
This batch is designed to enhance its crispness by adding brewing rice to the tropical, citric impression created by black koji malt. The aroma is described with lime and lemon, while the flavor is said to have a bitterness reminiscent of grapefruit pith. Whereas the previous release had a stronger viscosity, this one is presented as having become "the usual hazy IPA."
According to the basic information in the post, the hops used are Ekuanot, El Dorado, and Sabro. The ingredients are Oryzae malt (black koji), kilned rice koji, rice, hops, and sugar, and no artificial enzymes such as saccharifying enzymes are used. The alcohol content is listed at 5%.
On its official website, the brewery describes itself as a nanobrewery in Wakayama City that makes gluten-free beer centered on rice koji as the main ingredient. Its focus on recipes that do not use barley, along with its continued pursuit of unique fermentation expression, also seems likely to offer a clue to the character of Black Head IPA.
