Connected with Kumazawa Shuzo and Shonan Beer, the restaurant uses peaches from Fruit Farm Kato in Fukushima City, Fukushima Prefecture, to create this fruit-forward beer.\n\nThe beer is made with Akatsuki peaches, a premium variety grown using enzyme farming, a cultivation method that draws on microorganisms found in nature. The peaches are known for their pronounced sweetness, moderate acidity, and abundant juice.\n\nStaff members from the trattoria also took part in preparing the fruit. Because the skin contains many aromatic compounds, it was intentionally left on while the stones were carefully removed by hand. This process helps preserve the peach’s character in the finished beer.\n\nPouring the beer reveals a cloudy appearance reminiscent of peach nectar.
