Elevage III has built a tap-beer setup around a modified refrigerator so it can serve keg beer in good condition. The bar keeps the keg, lines, and faucet chilled around the clock, then fine-tunes temperature to match the day’s conditions.

The reason it serves beer at the beginning of a course meal is practical: it avoids overwhelming an empty stomach with something too strong or too acidic. In the post, the bar specifically recommends a soft, wheat-based Weizen rather than a typical lager, using beer as a gentle opening to stimulate the appetite.

The current lineup includes Rock Weizen from Yatsugatake Touchdown Brewery and Weizen from Daisen G Beer. Both are about balance rather than force: smooth texture, mild bitterness, and a profile that leads naturally into food.
