Sakazuki Brewing to Tap Sake Yeast Beer 'Hatsukaze' on April 15
Sakazuki Brewing in Adachi, Tokyo held its long-awaited pairing day on April 15 and tapped its sake yeast beer 'Hatsukaze.' The new release uses white rice koji and yuzu peel, paired with a carpaccio of Hokkaido scallops.
In a post on April 15, Sakazuki Brewing in Adachi, Tokyo announced that it would hold a "long-awaited pairing day." The star this time is the new release 《Hatsukaze》, which was tapped that same day. It is introduced as a "sake yeast beer" style fermented with sake yeast, with white rice koji and yuzu peel added.
The post explains that 《Hatsukaze》 is characterized by a strong banana aroma derived from sake yeast, a delicate acidity from the koji, and the refreshing note of yuzu. While it has a personality different from beer yeast, the overall finish aims for a balance that feels "Japanese," suggesting a design that evokes the spring atmosphere.

This dish uses irizake, made by simmering sake, umeboshi, and bonito flakes, as a jelly to bring out the sweetness of the scallops. Sakazuki Brewing says that the citric acid from the rice koji, the acidity of the ume, and the umami from the bonito flakes overlap with the flavor of 《Hatsukaze》, making it a combination that supports the scallops at the center.
On the taps that day were 17 beers ranging from regulars to more distinctive offerings, including 《shy girl》, 《shy daddy》, 《hangover!》, 《Twilight》, and 《Yoiyami no Kuro》, with 《Stardust》 already sold out. By carefully showing the tap status and encouraging guests to enjoy the limited pairing, the brewery's service style feels like the kind of thoughtful recommendation that is typical of the shop.
