Kagiya Brewery Releases New Batch of Gold Medal Hazy IPA MELLOW YELLOW
Kagiya Brewery in Kawasaki has released a new batch of its signature beer, MELLOW YELLOW. The recipe remains unchanged, while the hop timing was revised to draw out deeper pineapple, passion fruit, and citrus aromas.
Kagiya Brewery has begun selling the latest batch of MELLOW YELLOW, its signature hazy IPA. The beer won a gold medal in the Juicy or Hazy India Pale Ale category for kegs at the Japan Great Beer Awards 2026.
MELLOW YELLOW has an ABV of 6.0% and a restrained bitterness with a juicy, fruity sweetness. Its aroma suggests pineapple, passion fruit, and citrus. The ingredients include malt, hops, oats, honey, lemongrass, licorice, and sage.
The brewery did not change the recipe. Instead, it adjusted when the hops are added during fermentation. By adding them when yeast activity is at its peak, the brewery aims to create biotransformation, in which yeast changes hop aroma compounds and adds greater depth to the finished beer.
Timing is carefully judged for each tank using gravity, carbon dioxide release, and tasting. Adding hops too early or too late can affect fermentation, aroma, and the final balance.
The latest batch is available in 330ml bottles through the online store and at Kagiya Brewery’s direct locations. Kagiya Brewery is also a brewpub in Minamikase, Saiwai Ward, Kawasaki, where guests can enjoy locally brewed beer in a casual food and drink setting.
For beer fans, MELLOW YELLOW offers a chance to compare the impact of brewing technique in a familiar hazy IPA: the same recipe and hops, expressed through more precise timing.
