ISEKADO, based in Ise, Mie, has announced a preview for its limited beer, Sakekasu Hazy IPA ZAKU Summer Sake. The collaboration uses sake lees from Shimizu Seizaburo Shoten's well-known sake Zaku, giving the beer a clear connection to local brewing culture in Mie.

According to ISEKADO's official shop, the beer is a `Sake Yeast Hazy IPA` with 6.5% ABV and 35 IBU. It is sold as a 350 ml can at 880 yen, and the product is also listed as a Mie Prefecture recommended item under the `Mie Selection` program.

The brewery describes the recipe as one that combines pineapple- and apple-like ginjo aromas with tropical hop character, leaning into a slightly dry summer profile. The tasting notes also mention white-wine-like nuances, natural wheat acidity, moderate bitterness, and a soft sake-lees finish reminiscent of amazake.

Another notable point is the use of a newly developed yeast built around `MK3`, a sake yeast from the Mie Prefectural Industrial Research Institute. ISEKADO says the modified `BMK3` yeast enhances aromatic compounds associated with ginjo sake, while keeping the fruity hop expression typical of a hazy IPA.

ISEKADO has long roots in Ise and is known for combining local ingredients with technically precise beer design. This release fits that pattern well: a summer seasonal beer that brings together sake lees, sake yeast, and hazy IPA aromatics in one limited package.
