Umenishiki Yamakawa in Ehime announced on Instagram that it has completed a new sake made with Ehime’s brand rice, "Himeno Rin." The post said that brewery shipments would begin today in limited quantities, and it is expected to take a little time before it appears on store shelves.

According to the announcement on the official website, the product is introduced as the junmai sake "Himeno Rin," made with Ehime Prefecture rice "Himeno Rin" and "Ehime Sakurahime yeast." Its flavor is described as a dry, crisp sake with a clear, refined mouthfeel, suited to pairing with Japanese cuisine as an accompaniment to meals.

Seen in the context of craft beer, the perspective of how to express the character of ingredients such as rice, yeast, and water is also relevant to brewing beer. Umenishiki Yamakawa also introduces itself on its official website as a brewery founded in 1872 and based in Shikokuchuo, Ehime, that produces not only sake but also beer and spirits. In other words, this new product can be seen as an extension of the company’s long-running focus on "local ingredients x fermentation technology."

For beer fans as well, this is news worth noting in terms of enjoying regional terroir. For now, it is a new release to watch by following the brewery shipment and checking it once it reaches stores.
