The dish was prepared after the kitchen found a good-priced batch of motsu, and the result leans on koji's gentle sweetness and saltiness before the chili heat comes through.
The beer to watch is the remaining 750 ml bottles of Cave D'occi × Novel Craft 'Reflection'. Brewed from the flagship Looper recipe and fermented and matured in Cave D'occi wine barrels, it is a richer take on the house saison.
