A saison built around local green sansho

Noroshi Brewing, based in Nagareyama, Chiba, has announced the release of Sansho Saison. The beer takes its name from sansho pepper and the Japanese word “sansho,” which can suggest a threefold toast. The concept reflects the brewery’s desire to connect past, present, and future through brewing.

The featured ingredient is green sansho pepper grown in Nagareyama. Its fresh, green character and cooling aroma blend with the spicy fragrance of saison yeast. Sichuan pepper adds a floral nuance, while coriander contributes a subtle citrus note. Both are used as background accents rather than dominant flavors.

Full-bodied yet dry

Brewed in the Saison style, Sansho Saison has an alcohol content of 6.5%. The malt bill includes Pilsener, 2-Row, Wheat Light, Crystal Rosewood, Melanoidin Beech, and Sour malt, with Mistral hops. Despite its moderate strength and body, the beer finishes dry and balanced.

Carbonation is set at approximately 2.6–2.7 volumes, with serving adjustments taken into account. The result is a beer that highlights Nagareyama’s local character while remaining suited to food pairing.
